Reindeer Cupcakes

HAPPY HOLIDAYYYYYSSS EVERYONE!!! I am just a little bit excited about the holiday season… I have always been and probably always will be. You can find me on November 1st checking to see if 103.5 has started their holiday radio yet.

Here we are today bringing you some fun holiday cheer with these really cute reindeer cupcakes! I have been having a lot of fun decorating cupcakes the past few months, which is shocking but refreshing. This creation is really simple but effective and can easily be done by anyone!

To start, prepare cupcakes and frost! I used Liv For Cake’s chocolate cake recipe and got 24 cupcakes exactly. This is my go-to chocolate cake recipe, thank you Olivia for an awesome cake recipe that works every time! I let them cool overnight just because I had no time to frost that night but it usually should take around an hour to be completely cooled.

Two tips for cupcakes… 1) Take the cupcakes out of the tins pretty quickly after them come out of the oven because you don’t want them to keep cooking while they “cool”. Sometimes I burn my fingers but it is all in the name for moist, perfectly done cupcakes. And 2) You need to wait until they are completely cooled in order to start frosting because buttercream and warm cake equals melted frosting, a disaster.

For the frosting I wanted it to be a soft brown so I went with Sally’s Baking Addiction chocolate buttercream frosting. It is really simple and tastes amazing! I doubled it because I didn’t want to run out and have to make another batch mid-frosting. Her page says one batch will frost 12-15 cupcakes so it all depends on how much you use per cupcake. If you love frosting and want a big dollop like I used you will need to double it, if you are just going to knife on a thin layer then one batch will probably do.

After you have baked, cooled and frosted your cupcakes you can set up for decorating! Here are the ingredients & tools I used to achieve this cute decoration:

  • Mini M&M’s (if you can’t find these you can use Red Hots or regular sized M&M’s)
  • Ghirardelli Melting Chocolate (this is found in the baking section of any grocery store)
  • Googley Eyes (Also found in the baking section but if they don’t have them you can make some eyes with the melting chocolate)
  • Parchment paper
  • Small plastic baggie

I started by creating the antlers. I melted about 1/2 cup of melting chocolate in a small bowl. This is way easier than you might think. These chips are really user friendly and come out perfectly. Once they were melted I transferred the melted chocolate into the plastic baggie. I snipped a little hole on one side, go smaller first, you can always snip more!

I placed the parchment paper on the table and got to piping out some antlers. If you are not confident with free handing it you can draw some antlers on the other side of the parchment paper and then flip it over to trace it essentially. If you couldn’t find the googley eyes you can also pipe some small dots for the eyes!

While those were setting (it took about 3 minutes for them to set which is amazing!) I got the red M&M’s ready to go, not very hard when you buy a holiday pack…

You can go in whatever order feels right but I started with the antlers. I placed them down into the frosting towards the front of the cupcake. The distance between can make them look really cute or kind of alien-like but just feel it out!

Next I added the red mini M&M nose.

And finally, the eyes! Again, you can decide what kind of look you want but the closer together, they look cuter.
