Today I come to you with a feature recipe from my little sister, Tatum.
There was a solid 4 years where I literally ate oatmeal EVERYDAY. I LOVE oatmeal. It got weird. I am not going to lie, somedays if I wasn’t able to have it for breakfast I would find a way to have it for dinner. And an ongoing thing Kyle says is, “do you love me as much as you love oats?” hahah
When I would make oats I would cook the oats in water, add banana, apple, walnuts to my bowl and fill the bowl with almond milk. So it was more like a cereal than what you think about oatmeal. I would switch off between rolled and steel-cut but never really got tired of my way of doing things.
UNTIL my little sister made some oatmeal the other day and my life has been changed forever. She cooked the oats IN the almond milk. First of all, when I came into the kitchen I said , “it smells like a churro”. Yes, these oats are that good without any added sugar!
Here is a breakdown of her process.
Add about a cup and a half of almond milk to a pan. We use unsweetened vanilla!
Add a 1/2 cup of rolled oats to the almond milk and turn on medium heat. Stir frequently!
Next add 1/4 tsp or a dash/sprinkle of cinnamon & 1/4 tsp or dash/sprinkle of vanilla.
As you can tell from the pictures it gets kind of bubbly and thick. That is GOOD!
We usually cook them for about 5 minutes or until you are satisfied with the texture of the oats.
As you can tell from the picture, the almond milk cooked down and the oatmeal is a thick creamy texture! So delicious. Next, she chopped up a variety of fruits. Feel free to add whatever fruits you like! Tatum usually does banana, strawberry & peach. My dad adds blueberries and banana. Like I said, I do banana, apples and recently have been adding almond butter.
