These were SUPER easy and really good!! I made these up on a whim while challenging myself to a s’mores themed baking week last year.
Ingredients:
- 1 cup softened unsalted butter
- 1/2 cup white sugar
- 1 cup graham cracker crumbs
- 1 1/4 cup flour
- Mini chocolate chips or small chunks of chocolate
- Mini marshmallows
Step 1: Beat 1 cup softened unsalted butter on high for 1 minute
Step 2: Add in 1/2 cup white sugar and continue beating, about 30 seconds more.
Step 3: Add in 1 cup graham cracker crumbs and 1 1/4 cup flour, mix until just combined.
Step 4: Ball into 1-inch balls and smush down into little round circles with a little well in the middle. Here is a picture of what this looks like… I use my thumb, hence thumbprint cookies, but you can use something like the end of a spatula.
Step 5: Freeze for 20 minutes & preheat your oven to 350 degrees.
Step 6: Bake for 12-15 minutes. Keep the oven on after you remove, you will need the broiler for your last step.
Step 7: While the cookies are still warm you add chocolate of your choice to each well. Some examples of chocolate choices… halved kisses, chocolate chips, cut up chocolate bar, etc.
Step 8: Add mini marshmallows or one regular marshmallow to the tops. Put them in the broiler for a few minutes until the tops begin to brown. This can go from brown to burnt real quick so make sure you are there watching the progress.
TIPS:
A broiler is the space below your oven, there is usually a sliding drawer of sorts. The flame is above the drawer so it really torches whatever is in the drawer.
